Pregel™ 46 is a pregelatinized, modified wheat starch that possesses excellent thickening properties, while adding clarity and smoothness to a wide range of foods. Pregel™ 46 provides process stability to foods during high temperature, mechanical shear and acidic conditions. During storage, Pregel™ 46 aids in moisture retention and helps minimize water release through refrigeration and freezing conditions.
