Midsol™ 46 is a modified, cook-up wheat starch that provides a smooth, uniform texture with excellent thickening properties. Midsol™ 46 increases process stability of foods subjected to high temperature and shear, as well as acidic conditions. Midsol™ 46 also enhances finished product attributes through added stability and moisture control in refrigerated and frozen storage conditions. This ingredient's extremely clean flavor profile makes it an excellent fit for reduced sodium food applications.
