Paul A. Seib, Ph.D.

Paul Seib

Paul A. Seib, Ph.D., attended Purdue University and received a B.S. degree in chemical engineering in 1958 and a Ph.D. degree in biochemistry in 1965. He began a teaching and research career at the Institute of Paper Chemistry in Appleton, Wisconsin. From 1970 to 2006, he served on the faculty of the Department of Grain Science and Industry at Kansas State University, and currently serves as Professor Emeritus. His research interests include sugars, wheat and sorghum starches, resistant starch, wheat-based foods, and stable forms of vitamin C. He has taught numerous courses in the field of cereal science and advised a wide range of graduate students.
