Mark Uebersax, Ph.D.

Mark Uebersax, Ph.D., earned his undergraduate degree at Delaware Valley College and his graduate degrees in food science from Michigan State University. He specializes in fruit and vegetable processing, teaching and research. He served as Chairperson of the Department of Food Science and Human Nutrition and Transition Director of the School of Packaging at Michigan State University. His research publications emphasize fruit and vegetable processing quality improvement with a primary focal point of processing and utilization of dry edible beans. He teaches courses in fruit and vegetable processing and food quality assurance and has had responsibility for graduate and undergraduate academic programs and internship placement.
